Pomegranate Yogurt Pancakes

A symbol of hope and eternal life, pomegranates play a major role in Middle Eastern cuisine, especially salads, sauces, and juices. Here, we’ve added them to an American breakfast favorite: pancakes.

Ingredients

Serving Size: 6

2 cups flour

1/4 cup sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 eggs

1 1/2 cups plain greek yogurt

3/4 cup milk

1/4 cup extra virgin olive oil

2 cups pomegranate arils

3/4 cup pure maple syrup

Directions

  1. Lightly grease and preheat a griddle or large skillet.
  2. Add all ingredients from flour through olive oil to your Whiskware™ Batter Mixer and shake until combined.
  3. Pour rounds of batter onto griddle or skillet, then add a generous sprinkling of pomegranate arils to each pancake. Cook until golden, flipping once.
  4. Serve topped with maple syrup and remaining arils.
