2 tablespoons milk
butter for cooking
1/4 cup sharp cheddar cheese, shredded
1 avocado, diced
salt and pepper to taste
1. Add eggs and milk to your Whiskware™ Egg Mixer and whisk together.
2. In a large non-stick skillet, melt butter over medium-low heat. Add egg mixture and let cook until eggs begin to set (about 1 minute). Gently push eggs around pan, letting any uncooked egg run onto the bottom.
3. When eggs are nearly cooked, sprinkle in cheese and stir as eggs finish cooking and cheese melts. Just before serving, stir in avocado.
4. Season with salt and pepper and top with plenty of fresh salsa.
