1 1/4 cups buttermilk
2 tablespoons unsalted butter, melted
1 cup all-purpose flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
8 slices cooked bacon
1. Lightly grease and preheat a griddle or large skillet.
2. Add buttermilk, butter, and egg to your and whisk together. Add flour, sugar, baking powder, baking soda, and salt and shake again, just until well combined.
3. Pour rounds of batter onto griddle or skillet and top each with a slice of bacon. Cook until golden, flipping once.
4. Transfer pancakes to plates, bacon side up, and serve with pure maple syrup.
