Have two more wonderful words ever been said? We’re pretty excited about National Bacon Day (December 30th annually), and we can’t think of a better way to celebrate than pairing two of our favorite foods. And frankly, it's a perfect time to fuel up on your favorite indulgences before those healthy-eating New Year’s resolutions kick in. So whip up a batch of Bacon Pancakes and savor every bite!

Serving Size: 2-4

1 1/4 cups buttermilk

2 tablespoons unsalted butter, melted

1 egg

1 cup all-purpose flour

2 tablespoons sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

8 slices cooked bacon

1.     Lightly grease and preheat a griddle or large skillet.

2.     Add buttermilk, butter, and egg to your Whiskware Batter Mixer and whisk together. Add flour, sugar, baking powder, baking soda, and salt and shake again, just until well combined.

3.     Pour rounds of batter onto griddle or skillet and top each with a slice of bacon. Cook until golden, flipping once.

4.     Transfer pancakes to plates, bacon side up, and serve with pure maple syrup.
