Winter Slaw Salad Recipe

This Winter Slaw Salad is a refreshing way to get your veggies during the colder months. The lemon poppy seed dressing, sweet apple, and creamy avocado provide a perfect contrast to the bitterness of beets and kale. Top with grilled chicken, grilled salmon, or sliced hardboiled eggs to turn this salad from a side dish into a satisfying meal.


Serving Size: 1

1 cup grated raw beets

1 cup grated carrot

1 cup grated jicama

1 cup grated crisp sweet apple

1 cup very thinly sliced kale

1 avocado, diced

1/4 cup chopped walnuts

protein of choice (optional)

3/4 cup extra virgin olive oil

1/4 cup fresh lemon juice

1 tablespoon mustard

1 tablespoon honey

1 tablespoon poppy seeds




Add beets, carrot, jicama, apple, and kale to a large salad bowl.

Add olive oil, lemon juice, mustard, honey, and poppy seeds to your Whiskware Dressing Shaker and whisk together. Pour dressing over vegetables (as much or as little as you prefer) and toss until well coated.

Top with avocado and walnuts, plus your protein of choice (grilled chicken, grilled salmon, hard boiled eggs, etc.)
