Australian Pikelets
As adorable as the name suggests, pikelets are pancakes from the land down under. These miniature discs (2-3 inches in diameter) are traditionally served at teatime, sweetened with jam and whipped cream.

Step 1.
Add all ingredients to Whiskware™ Batter Mixer and shake well to mix. Let sit for 15 minutes. (If your batter is too runny, you may add up to ¼ cup of additional of flour.)

Step 2.
Heat a large nonstick skillet over medium heat.

Step 3.
Lightly coat the bottom of the pan with butter or oil.

Step 4.
Shake batter again, then dispense several tablespoon-sized dollops into the pan, with enough space to allow for spread.

Step 5.
Cook 1-2 minutes, until bubbles appear on the surface.

Step 6.
Flip and cook for another minute, then transfer to serving plate or cooling rack.

Step 7.
Repeat with remaining batter.

Step 8.
Serve hot or cold with strawberry jam and whipped cream.
