English Sugar and Lemon Pancakes

Traditional English pancakes are quite thin and simply topped with a generous sprinkling of lemon juice and sugar. Try these easy-as-can-be treats for breakfast, with afternoon tea, or even for a midnight snack.
2 eggs
2 1/4 cups whole milk
1 1/2 cups all-purpose flour
1/4 cup white sugar
2 lemons
Add eggs, milk, and flour to your Whiskware™ Batter Mixer and shake to combine.
Heat a large nonstick skillet over medium heat.
Starting in the center of the pan, pour out about 1/4 cup of batter, circling outward as you pour to help spread the pancake thin.
Cook 1-2 minutes until bottom side is golden brown. Use a flat spatula to loosen and flip the pancake. Cook for an additional minute and transfer to serving plate. (Repeat with remaining batter.)
Squeeze lemon juice over each cooked pancake and sprinkle evenly with sugar. Roll or fold the pancake and dig in!
