Greens and Goat Cheese Scramble

Want extra greens in your diet? Try this delicious scrambled egg dish, packed with kale, chard, or spinach or go for a combo off all three. Whisking Greek yogurt into the eggs (in place of milk) gives them a unique tang, and goat cheese and crushed red pepper add irresistible creaminess and a spicy kick.

Directions

  1. Step 1.

    Add eggs and Greek yogurt to your Whiskware Egg Mixer and whisk together. 

  2. Step 2.

    Heat oil in a nonstick skillet over medium heat. 

  3. Step 3.

    Add greens and saute until they begin to wilt. 

  4. Step 4.

    Add garlic and cook for an additional minute. Reduce heat to low. 

  5. Step 5.

    Pour egg mixture over greens and season with salt and black pepper. 

  6. Step 6.

    Cook, stirring frequently, until desired firmness. 

  7. Step 7.

    Just before done, stir in goat cheese. Garnish with crushed red pepper flakes.
