Ingredients
Salad
4 cups packed assorted baby lettuce leaves
4 radishes, thinly sliced
4 small white mushrooms, thinly sliced
1 fennel bulb, halved, cored, and thinly sliced
1 English cucumber, sliced into thin rounds
1/2 cup sugar snap peas, trimmed and cut in half
1 cup pea shoots
1/4 cup toasted, unsalted cashews, roughly chopped
1 ripe avocado, sliced
Dressing
1 tsp lemon zest
1/4 cup fresh lemon juice
1 tbsp unseasoned rice vinegar
1/4 cup olive oil
Pinch of salt
Directions
Add all salad ingredients except pea shoots, cashews, and avocado to large salad serving bowl.
Add dressing ingredients to your Whiskware™ Dressing Shaker and shake well.
Pour dressing over salad and use tongs to mix until dressing is evenly distributed. Top salad with pea shoots, cashews, and avocado and serve.
