1. Spinach and Chicken Salad

All you need is fresh spinach and cooked chicken for this recipe. Before putting your chicken onto your salad, add this homemade dressing first. 2. Zucchini Basil Mini Quiche

You can prep these tasty morsels in as little as 10 minutes, then stick them in the fridge for later.


Recipe: Whisk 1/4 cup of cornstarch and 1/2 cup of milk together until smooth. Add two eggs and two egg yolks, another 3/4 cup of milk, 1 cup heavy cream, 3/4 tsp. of kosher salt, and 1/8 tsp. of nutmeg, and whisk it up again.


In a non-stick pan, heat some oil and sauté four minced cloves of garlic and two minced shallots. Grate some zucchini into the pan and stir until soft. Take it off the heat and start greasing your mini muffin tins.


The order you pack the tins is going to matter here. Start with a pinch of grated cheese at the bottom, then 1 tsp of your zucchini mixture. Hit it with a bit of chopped fresh basil and then one whole tablespoon of batter.


Put it in an oven at 450F, and bake until golden and puffy, about 15-18 minutes. Make sure to let it cool first before digging in. If they're too stubborn to come out of the tin, run a butter knife around the inside rim to loosen it.


3. Coconut Chia Protein Pancakes

Grill it with a bit of oil in a hot pan until cooked on both sides. Once cooked, chop it into cubes and put it aside or in a snack container for later.


Get a tortilla and load it up with your chicken, shredded cheese, a sprinkle of minced cilantro, and green onions. Ranch is optional, but make sure to go with a low-fat one. Fold it into the classic burrito shape, and put it in a medium hot pan.
