3 tablespoons olive oil
8 corn tortillas, cut into eighths
1/2 teaspoon salt
Optional toppings: chopped cilantro, diced white onion, sliced avocado, cotija cheese, salsa fresca, hot sauce
Heat oil in a large nonstick skillet over medium heat. Add eggs and salt to your Whiskware™ Egg Mixer and whisk together.
Fry tortilla pieces in oil for 5-8 minutes, or until crispy. Pour eggs into pan and fold together with tortilla pieces, stirring occasionally until cooked to desired consistency.
Plate and finish with your choice of toppings.
