Lentils are a great way for vegans and vegetarians to get protein—and combined with pomegranate arils in this tasty salad, you’ll get plenty of delicious flavor, too.
1 tablespoon pomegranate molasses
1 tablespoon rice vinegar
juice and zest of 1 lemon
1/4 cup extra virgin olive oil
2 1/2 cups cooked lentils
1 cup halved cherry tomatoes
1 cup pomegranate arils
1 cup chopped English cucumber
1/4 cup finely chopped fresh mint
salt and pepper to taste

Add all dressing ingredients to your Whiskware™ Dressing Shaker and shake well.
Place salad ingredients in a large bowl. Add dressing and stir to combine.
