Malaysian Chicken Curry

- 1 boneless/skinless chicken breast
- 3 tbsp meat curry paste
- 3/4 cup water
- 1 tbsp coconut milk
- 1 diced shallot
- 1 tbsp oil
In a small pot, saute shallots in oil until golden brown.
Stir in curry paste after a few minutes, add chicken and stir it into curry and shallot mixture.
Add water and bring mixture to a boil then lower heat and simmer for 10-15 minutes. Stir in coconut milk and serve.
